At Chacinerías Díaz we respect and maintain the philosophy of allowing the evolution of a natural product.
- Phase 1: The product enters the cooling chambers where it is cooled and humidity controlled to ensure ideal conditions are introduced. These chambers are designed to emulate and “open windows” environment to replicate the natural curing process.
- Phase 2: After the product has reached the stage where it has lost a sufficient amount of water content, it is moved to the natural bodegas; where it remains to acquire the perfect format, aroma and flavor.
The result is a visually pleasing line of products that contain all the artisanal characteristics and flavors that have made these foods so famous over the years.
